How to make Chinese soybean paste

1. Ingredients: 1 kg soybean, 400 g salt, 4 kg watermelon pulp, appropriate amount of flour, and a glass container. Seasonings include star anise, cinnamon, pepper, and cinnamon, and it is best to prepare 300 g of cooked peanuts.

2. Soak the soybeans in water for four to five hours, then steam them in a steamer. Don't take them out immediately after steaming. It is best to let them simmer in the pot for about ten hours.

3. Take out the steamed soybeans and put them into flour for a while, so that each soybean is covered with flour. Next, ferment the yellow flour wrapped in flour, and wait until green hair grows on the surface of the soybeans before taking them out and drying them in Yangjiang.

4. After drying the fermented soybeans, put them into a glass container. Add the prepared watermelon, salt and peanuts. Finally, put in other seasonings. Mix well and seal it. After about a month, you can take out and eat your homemade Chinese soybean paste. After about 100 days of fermentation, the taste of this paste will reach its best level.
