How to cook yellow croaker

1. Heat oil in a pan, the oil temperature should be higher, about 70%, put the yellow croaker into the pan and fry until both sides are shaped.

2. Heat oil in a pan, stir-fry onion, ginger, garlic, and then stir-fry bean paste. Stir-fry for a while until the oil turns red. You can add some dark soy sauce for coloring. After frying the bean paste, add water, salt, a small amount of sugar, chicken essence, and cooking wine. Put the yellow croaker into the pan and cook until cooked. Yellow croaker can be divided into large and small yellow croakers. Together with hairtail, they are known as the three major seafoods in China. They are mainly produced in the East China Sea and the South China Sea, with the largest production in Zhoushan Islands and Nan'ao Island in Guangdong. The peak production period of large yellow croaker along the coast of Guangdong is October, December to March in Fujian, and May in Jiangsu and Zhejiang.

The appearance and texture of large yellow croaker are very similar to those of small yellow croaker. Large yellow croaker has a large body and small scales, a large and round mouth, a long and narrow tail stalk, few spines, thick and firm meat, and is easy to remove spines.

High-quality yellow croaker has a golden and shiny body surface, complete scales that are not easy to fall off; the meat is firm and elastic; the eyeballs are full and protruding, and the cornea is transparent; the gills are bright red or purple, without any peculiar or fishy smell, and the gill filaments are clear.

2. The difference between large yellow croaker and small yellow croaker: The appearance of large yellow croaker and small yellow croaker is very similar, but large yellow croaker is larger than small yellow croaker, and the length of its caudal peduncle is more than 3 times the height of its caudal peduncle; the second fin spine of the anal fin is equal to or larger than the eye diameter, the scales are small and tightly organized, and there are 8 to 9 scales between the dorsal fin and the lateral line; the head is large, the mouth is obliquely split, and the eyes on the head are large. Small yellow croaker has a higher back, large round scales, a short and thick caudal peduncle, a wide and upturned mouth, and small eyes.
