Coconut Milk Kidney Bean Chicken Soup Ingredients and Preparation

1 chicken, 1 coconut, 1 handful of kidney beans, some green onion and ginger, 1 teaspoon of white wine, 1 teaspoon of salt

Coconut Milk Kidney Bean Chicken Soup Method:

1. Wash the kidney beans and soak them in water overnight;

2. Remove the internal organs of the chicken, clean it (especially the mouth must be cleaned), then put it in a pot, add clean water, add some green onions and ginger, add 1 teaspoon of white wine, then turn on the fire. After the water boils, use a spoon to continuously pour water on the chicken body, and then pour out the water and blood foam together;

3. Add an appropriate amount of warm water to the pot, insert a straw into the coconut, shake it continuously, pour the coconut milk into the pot, and then put the swollen kidney beans into the pot;

4. Bring to a boil over medium heat, skim off the foam and oil on the surface of the soup, turn to lowest heat, and simmer for 1.5 hours. Add 1 teaspoon of salt after boiling, and simmer for another 10 minutes before turning off the heat.

Tips:

1. The chicken body must be cleaned thoroughly, especially the internal organs and the chicken beak.

2. It is very important to blanch the chicken for the first time. It can clean out impurities, blood foam and dirt. Adding onion, ginger and white wine can remove the fishy smell of chicken and make the chicken soup taste better.

3. Do not add spices such as star anise and cinnamon, but add pure coconut milk. Coconut milk not only makes the chicken soup taste more delicious, but also has the effect of clearing away heat and reducing internal heat.

4. Kidney beans have the effects of clearing heat and detoxifying, diuresis and reducing swelling. Chicken soup with kidney beans is most suitable for consumption in summer and autumn.

5. The chicken soup should not be stewed for more than 3 hours. About 2 hours is best, because after three hours the protein in the chicken will hardly dissolve and the fat will dissolve faster.
