Materials

Ingredients: 300g pork (lean)

Accessories: 15g coriander, 25g magnolia slices

Seasoning: 40g egg white, 35g starch (pea), 10g green onion, 10g ginger, 8g garlic, 15g chili (red, pointed, dry), 10g cooking wine

15g soy sauce 20g sugar 5g vinegar 2g salt 2g MSG 1g pepper 15g sesame oil 60g soybean oil

Production process

1. Wash the lean pork, slice it into thin slices, then cut it into thin strips, add egg white and 25 grams of starch, mix well;

2. Cut the magnolia slices and dried chili into shreds, and wash and cut the coriander into sections;

3. Mix cooking wine, soy sauce, sugar, refined salt, vinegar, MSG, pepper, 100g chicken broth and 10g starch to make sauce;

4. Heat oil in a wok until 40% hot, add shredded pork and stir until cooked. Pour into a colander;

5. Heat the remaining oil in the original spoon, add the onion, ginger, garlic, magnolia slices, and dried chili shreds, stir-fry, add the shredded meat, pour in the sauce and stir to mix well.

Mix well, drizzle with sesame oil and sprinkle with coriander.

Because of the frying process, you need to prepare about 800 grams of soybean oil.

Recipe incompatibility:

Pork (lean): Pork should not be eaten with black plum, licorice, crucian carp, shrimp, pigeon meat, snails, almonds, donkey meat, lamb liver, coriander, turtle, water chestnut, buckwheat, quail meat, and beef. It is not advisable to drink a lot of tea after eating pork.

Milk and lean meat are not suitable to be eaten together, because milk contains a lot of calcium, while lean meat contains phosphorus. These two nutrients cannot be absorbed at the same time. Foreign medical circles call it phosphorus-calcium incompatibility. The best ratio of calcium to phosphorus is between 1:1 and 1:1.5, at which time they promote each other's absorption.

Coriander: When taking tonics and Chinese medicines such as Atractylodes macrocephala and Cortex Moutan, it is not advisable to take coriander to avoid reducing the efficacy of the tonics; at the same time, do not add coriander to pork, otherwise it will help heat and produce phlegm.
