According to modern scientific analysis, every 100 grams of dried mushrooms contain 12.3 grams of water, 20 grams of protein, 1.2 grams of fat, 31.6 grams of dietary fiber, 30.9 grams of carbohydrates, 20 micrograms of carotene, 0.19 milligrams of vitamin B1, 1.26 milligrams of vitamin B2, 20.5 milligrams of niacin, 5 milligrams of vitamin C, 83 milligrams of calcium, 258 milligrams of phosphorus, 10.5 milligrams of iron, and 8.75 milligrams of zinc. Shiitake mushrooms also contain more than 30 enzymes and 18 kinds of amino acids. Among the 8 essential amino acids for the human body, shiitake mushrooms contain 7 kinds. Therefore, shiitake mushrooms can be used as the first choice of food for human enzyme deficiency and amino acid supplementation.

2. Cooking Method

Because shiitake mushrooms are rich in glutamic acid and some amino acids rarely found in other foods, they are delicious. Shiitake mushrooms are suitable for both meat and vegetarian dishes, and are an excellent raw material for cooking delicacies.
