How to make Tremella and Lotus Seed Soup

1. Soak the Tremella in clean water, remove the yellowed hard knots at the bottom, and then tear them into pieces for later use. Generally, three or four pieces are enough.

2. The lotus seeds need to be coreless so that they are not bitter. You can put as many as you like.

3. Put enough water in the soup pot at one time to leave room for evaporation. Do not add water during the cooking process.

4. Put white fungus, rock sugar (about 3 taels), dates, and wolfberries into cold water, turn on the fire, heat, and boil. Be sure to stir the pot constantly to prevent the white fungus gelatin from sticking to the pot. After boiling, turn down the heat and simmer, and stir the pot constantly.

5. Lotus seeds are easy to ripen, so add them later.

6. After the water boils, continue to cook until the Tremella becomes gelatinized and the soup becomes thick.
