How to stir-fry dried beans

How to fry dried beans

1. Before cooking, soak the dried beans in water. Do not pour out the water, save it for later use. Cut the beans into small pieces and save them for later use. Of course, if you prefer chewier ones, you can just wash the beans with water.

2. Wash the pork belly and cut it into small cubes. When cutting, make sure there are both fat and lean meat, so that it tastes good.

3. Pour oil into the pot, add the pork belly after the oil is hot and stir-fry until it changes color and the oil comes out, then add soy sauce, ginger, salt, pepper, cooking wine and vinegar. You can also add some star anise for seasoning if you like.

4. After stir-frying evenly, pour in the chopped beans, stir-fry evenly, and turn off the heat.

5. Pour the water used to soak the beans into a casserole or pressure cooker (the amount of water depends on the tool, the casserole should cover the beans, and a little water should be enough for a pressure cooker) and simmer for about an hour. If you don't like soup, you can steam it directly in a rice cooker.
