Features of Stir-fried Chinese Kale

Chinese kale is a very refreshing vegetable. Too complicated cooking methods will fail to highlight its flavor. Instead, the stir-frying method makes the Chinese kale taste refreshing and not bland.

Ingredients for stir-fried kale:

200 grams of tenderloin, 100 grams of leek, 50 grams of bean sprouts, and 50 grams of carrots.

Steps for stir-fried kale

1. Remove old leaves and hard skin from kale, wash, drain and cut into 5cm long segments.

2. Cut the dried red chili into small pieces. Chop the garlic.

3. Bring water to a boil over high heat, add salt, then pour the chopped kale into the water to blanch it, and quickly remove it from the pot and rinse it with cold water.

4. Heat the oil in a wok over high heat until it is 50% hot, then turn to low heat, add minced garlic and dried chili segments, stir-fry until fragrant, then add oyster sauce and chicken essence to make a spicy sauce.

5. Pour the spicy sauce on the kale segments and mix well.

Tips

1. When processing kale, be sure to remove the rough skin at the root, otherwise it will affect the taste.

2. After blanching in salt water, cooling it down with cold water can make the kale green and crispy, but the blanching time should not be too long, otherwise the nutrients will be lost. Just cook it until it is cooked.

3. The spicy sauce must be simmered slowly over low heat, otherwise it will become mushy.
