Braised Noodles with Beans [Recipe]

1. Cut the pork belly into thin slices; wash the beans, tear off the stems at both ends, and then break them into 4-5 cm long segments; peel the garlic, flatten it and slightly chop it; remove the stems of the red pepper and cut it diagonally into slices; cut the raw onion into chopped green onions and set aside;

2. Add a proper amount of oil to the pan and heat it to 40% hot. Add chopped green onion and half of the minced garlic and stir-fry until fragrant. Then add the pork belly slices and stir-fry with light soy sauce, dark soy sauce, sugar and salt. Then pour in the beans and stir well.

3. Pour clean water over the beans, cover and simmer over medium heat until the soup boils, spread the noodles evenly on the beans;

4. Cover the pot and simmer over medium-low heat. Open the pot after 5 minutes and use chopsticks to stir the noodles to make the flavor evenly distributed. Cover the pot and continue simmering until the water in the pot is almost dry. Sprinkle with the remaining minced garlic, chili slices, chopped green onions, and drizzle with pepper oil or sesame oil and mix well.

1. Many people like braised noodles. However, many people's cooking methods are not authentic. The key lies in the braising process. Braised noodles are not boiled noodles. They are not cooked with soup, but braised with the temperature of steam.

2. Add some oil when putting the noodles in to prevent the noodles from turning into dough after encountering steam. In addition, the noodles stewed will be more chewy and tough.

3. After all the noodles are cooked, mix the vegetables and noodles.
