1 yellow croaker, 20g scallion, 20g garlic, 10g ginger, 10g chili flakes, some cornstarch, 150cc water, 2 tbsp Ngautou spicy shacha sauce, 1 tbsp soy sauce, 1 tbsp rice wine, 1 tsp black vinegar, 1 tsp sugar, a pinch of salt, 10g ginger, 10g scallion, 1/2 tbsp rice wine

1. Wash and drain the yellow croaker, add all the marinade ingredients and marinate for about 15 minutes, then apply cornstarch on it and set aside.

2. Heat a pan, pour in a proper amount of oil, heat the oil to 170℃, put the yellow croaker prepared in step 1 into the pan and fry for 2 minutes, remove from the pan and drain the oil for later use.

3. Step 2: Leave about 2 tablespoons of oil in the pot, add scallion, ginger, garlic and chili slices and sauté until fragrant.

4. Add all the seasonings and stir-fry until fragrant, then add water and the yellow croaker from step 2 and cook over low heat until the flavors are absorbed.

There are two types of yellow croaker: small yellow croaker and large yellow croaker. Together with hairtail, they are known as the three major marine products of China. Small yellow croaker is small in size but has large scales and a pointed mouth. It is mainly distributed in the Bohai Sea, the Yellow Sea and the East China Sea, such as Qingdao, Yantai, Bohai Bay, Liaodong Bay and the East China Sea, such as Qingdao, Yantai, Bohai Bay, Liaodong Bay and Zhoushan Islands. The largest number of yellow croakers are produced in Qingdao, and the production period is from March to May and September to December.

The body of the small yellow croaker is long and flat, shaped like a willow leaf, with a pointed mouth, otoliths in the head, gray-brown back, yellow sides of the abdomen, medium-sized scales, a long dorsal fin with undulations in the middle, and a double-truncated tail fin. The meat of the small yellow croaker is tender and plentiful, the meat is shaped like garlic cloves, with few bones and delicious taste.

The difference between large yellow croaker and small yellow croaker: The appearance of large yellow croaker and small yellow croaker is very similar, but large yellow croaker is larger than small yellow croaker, and its tail peduncle is more than 3 times the height of the tail peduncle; the second fin spine of the anal fin is equal to or larger than the eye diameter, the scales are small and tightly organized, and there are 8 to 9 scales between the dorsal fin and the lateral line; the head is large, the mouth is obliquely split, and the eyes on the head are large. Small yellow croaker has a higher back, large round scales, a short and thick tail peduncle, a wide and upturned mouth, and small eyes.
