The soup was white and delicious, and what I liked most was that there were beans as big as thumbs in it, which tasted pink and delicious! I'm drooling just thinking about the recipe of kidney bean and pig's trotter soup!

But since I came to Shenzhen, I haven’t had my grandmother’s pig’s trotter soup for a long time!

I want to make it myself, but I can't buy that kind of beans.

A few days ago, by chance, I saw beans growing in Walmart. I learned that these beans are kidney beans. I quickly bought some and tried to make soup. Finally, I tasted the taste I had missed for a long time! So I want to share with you my favorite: kidney bean and pig's trotter soup

How to make white kidney beans

Pepper + kidney bean (this kidney bean is a new variety, the king of racks ~ very tender and cooked once blanched) meat! All the ingredients of green onion are processed! The kidney beans are cut with a rolling knife ~ it is very good to stir-fry them in this way!

Cook the beans! But don't overcook!

Add cold water to keep the color and nutrition! Stir-fry the ingredients! Add kidney beans and continue to stir-fry! Add seasoning and salt before serving! Very homely kidney beans!

The color of kidney beans after cold water is like this. Emerald green. Actually, they are already cooked! Don't doubt that eating them raw will cause poisoning! I have stewed potatoes with this variety of kidney beans. No matter how I stew them, the color is very green and looks very raw! Stir-fried kidney beans are actually stir-fried directly. Add more oil. The kidney beans are a little mushy. This is the right way! But there are indeed undercooked kidney beans. To avoid poisoning, it is safer to overheat them! Wash the sweet beans and soak them in pure water for one night (in most places in China, if you use raw water to soak them, there will be either a fermented smell or a strong chlorine smell). Add more rock sugar and more water and simmer them in a pressure cooker for half an hour. It is super good to eat hot, cold or iced. 2. Salty beans. Add a pork elbow, the beans soaked as described above, as well as rice wine, Shanghai banquet soy sauce, and a little rock sugar. Simmer in a pressure cooker for half an hour. It tastes very good when eaten hot. If you add half a pound of clean pork skin, simmer for 45 minutes, remove all the bones, tear the meat apart, pour it into a basin, and cool it down to make delicious bean skin jelly. 3. Stew the kidney beans. Break the kidney beans into pieces, about one inch long.

Pour oil, cook the scallions, stir-fry the kidney beans, pour a little water and add appropriate amount of salt. Cover the pot for a few minutes, stir-fry again, cover the pot until cooked for about 5 minutes. You can also fry the meat first, then fry the kidney beans, add water and stir-fry until cooked. You can also add potato cubes to stew together, that is, kidney beans stewed with potatoes. 4. Stir-fried kidney bean shreds Cut the kidney beans into shreds, cook the oil and scallions in the pot, stir-fry the shredded meat (or not), add the kidney bean shreds and stir-fry together, add salt, and stir-fry until cooked. 5. Kidney beans and eggs Cut the kidney beans into dices (very small pieces), cook the oil and scallions in the pot, add soy sauce, stir-fry the kidney beans in the pot, add water, and the amount is a little more. Because it is a soup dish, add salt when the pot is open. After the kidney beans are cooked, pour 1~2 eggs into the boiling pot, turn it over and serve. Warm reminder that kidney beans should not be eaten raw, because eating kidney beans raw will produce toxins, which will cause diarrhea, vomiting and other phenomena, and half-cooked kidney beans are also not suitable.
