Production steps

1. Remove the skin of the prepared eggplant and cut into pieces. Use two toothpicks to fix it in the middle to set the shape. Then mix starch and eggs into a batter and roll the eggplant in it.

2. Put cooking oil in the pot, wait until the oil temperature rises to 60% to 70%, add the eggplant coated with batter and fry until it is set. Put cooking oil in another pot, add minced garlic and tomato sauce, then add a spoonful of water, stir-fry continuously, and finally add white vinegar and sugar. After thickening, take out and pour it on the fried eggplant, finally sprinkle with sesame seeds and serve directly on the table.
