1 chicken breast, 5 dried mushrooms, 5 small green vegetables, 1 carrot, 10 scallops, 1 handful of peanuts, 1 handful of pearl barley, half a bowl of rice, a little ginger

How to make assorted chicken and vegetable porridge

1. Rinse the mushrooms and soak them in clean water. Rinse the scallops and soak them in clean water.

2. Wash rice, coix seeds and peanuts, put them into a casserole, pour 4-5 times the amount of water into it, and soak for more than half an hour.

3. After boiling over high heat, reduce heat and simmer for 30-40 minutes. Stir gently with a wooden spoon frequently to prevent it from sticking to the bottom.

4. Meanwhile, squeeze out the soaked mushrooms, cut into thin strips, and add them together with the scallops when the porridge has been cooked for 20 minutes.

5. Wash and peel the carrots, grate them into thin strips with a grater, and add a little minced ginger.

6. Chop the chicken breast into minced meat (first cut into thin strips, then cut into small pieces, and finally chop into minced meat).

7. Wash the green vegetables and grind them into coarse pulp using a blender.

8. After the porridge has been cooking for about 40 minutes, pour in the minced chicken and minced ginger first. Use a wooden spoon to gently stir the minced chicken in the porridge evenly to avoid lumps.

9. Pour in shredded carrots and stir well.

10. Turn on medium-low heat and add salt according to your taste.

11. When small bubbles appear on the surface of the porridge again, pour in the chopped green vegetables and turn off the heat after half a minute.

12. Add a few drops of sesame oil when eating. If you like a strong taste, you can also sprinkle some white pepper powder.

Tips

1. Stir the porridge from time to time when cooking to prevent it from sticking to the pot. Use a wooden spoon to protect the enamel inside the casserole. If the water is insufficient, add hot water.

2. If it is too troublesome, all the ingredients can be cut into shreds. It is also OK to cut the green vegetables into small pieces.

3. You can wash and dry the chicken breast in advance, freeze it for 1 hour, then take it out and cut it into strips, which will be easier.

4. The green vegetables must be added half a minute before serving, otherwise the color will not be green.
