② Wash the rice, soak it in water for 1-3 hours, put it in a pot and cook for 30 to 40 minutes. Add salt and chopped vegetables before turning off the heat, and cook for another 10 minutes.

1) Break the greens apart and wash them. Put them into boiling water for half a minute, remove them and soak them in cold water. After cooling, drain and chop them for later use.

2) Pour out the water used to blanch the vegetables, add clean water again, heat over high heat until boiling, pour in the rice, stir it, and then turn to medium-low heat. Add a spoon (to change the boiling direction to prevent overflowing), and then cover the lid, leaving a 2 cm wide gap.

Secondly, look at the length of the leaves. Generally, short leaves are of better quality and have a soft and sticky taste, while long leaves are of slightly lower quality. It is best not to buy Shanghai greens with dark green leaves and unusual smells, as they are likely to have been sprayed with chemicals. Choose Shanghai greens with no dirt or impurities on the leaves, and no damage, rust, spots, or whiteness. If the leaves are wilted, it means that the leaves are no longer fresh. If the leaves are severely infested with insects, yellowed, or rotten, they cannot be bought for consumption.

The easiest way to select is of course to observe its appearance. Do not choose fruits with insect spots, disease spots or mechanical damage.

Another most direct way is to cut the kiwi fruit open to see if the flesh is fresh and whether the seeds have turned black. If not, it means it is not fully ripe.

Another important point is that when choosing kiwifruit, the bigger the better. Generally, one kiwifruit is about 100 grams, and the size is similar and relatively uniform. If it is over 130 grams, this particularly large fruit should generally not be selected, because this kind of fruit is usually treated with drugs.

In addition, Master Zheng also warned everyone that when buying kiwis, they should choose those that are slightly harder. After buying them home, find a paper bag, put the kiwis in it, then put in two or three apples or pears, and then tie the bag. The next day, the kiwis will become soft and delicious.
