When making stir-fried eggplant with beans, you need to prepare a long eggplant, 200 grams of long beans and two heads of garlic. In addition, you also need to prepare 20 grams of Haitian sauce, 5 grams of fennel, and appropriate amounts of oil, salt, soy sauce and other seasonings.

Steps for stir-fried beans and eggplant

1. Wash the prepared eggplants with clean water, then cut the eggplants into cubes, cut the beans into small pieces, put them in a small bowl, add a small amount of table salt and marinate for a while, and remove the marinated water.

2. Peel the garlic and cut it into minced garlic for later use. Heat the cooking oil in a wok, then put the chopped garlic in and stir-fry until fragrant.

3. Put the marinated eggplant and beans into the pot, add appropriate amount of soy sauce and stir-fry. After a while, add the prepared fennel.

4. Stir-fry the ingredients in the pot repeatedly. After the eggplants are all soft, add the prepared Haitian sauce, then add a small amount of water, and continue to stir-fry. After all the ingredients in the pot are cooked, you can take them out and serve them.
