When making eggplant stew, you can prepare two to three long eggplants, 150 grams of minced meat, and some chopped radish and green onion, two heads of garlic, 25 grams of bean paste, and appropriate amounts of cooking oil and salt.

Specific steps for making eggplant casserole

1. Remove the stems of the prepared eggplants, wash them and cut them into long strips with a knife. Then put water in a pot and bring it to a boil, then blanch the eggplant strips in the boiling water. After taking them out, immediately rinse them with cold water.

2. After the eggplant strips have been rinsed with cold water, take them out and drain the water for later use. Peel the garlic and mince it. Put oil in a wok, heat it, add the minced garlic and stir-fry until it brings out the aroma. Then add the minced meat and stir-fry until it changes color.

3. When the minced meat changes color, add the eggplant strips and stir-fry together. After the eggplant becomes soft, add the chopped radish and bean paste and stir-fry evenly. Then add appropriate amount of water and heat to boil.

4. Take out the fried eggplant and put it into a casserole and continue cooking for about ten minutes. Finally, add chopped green onion and salt to enhance the flavor. The homemade eggplant casserole is ready to be eaten.
