Sweet and Sour Eggplant

Because I like sour food, I often make sweet and sour eggplant, so today I will tell you how to make it:

Ingredients: Eggplant

practice:

Cut the eggplant into two halves, cut crosswise (do not use force to prevent the skin and flesh from breaking), and then cut into 6 cm long pieces. Marinate with salt for half an hour.

Remove the salt water, fry in oil pan over low heat until golden brown and serve in a bowl. Leave a little oil in the pan. Mix sugar, Zhenjiang vinegar, chicken essence and garlic paste and bring to a boil. Add the fried eggplant into the sweet and sour pan and stir-fry. When a little soup is left, serve in a bowl. The sweetness and sourness can be adjusted according to your taste.

Features:

No water is added during cooking, so it is not easy to go bad, making it especially suitable for summer meals.

Ingredients: Two eggplants

Seasoning: green onion (cut into long strips), garlic, chili, salt, sugar, vinegar, and soy sauce.

Preparation method:

1. Cut the eggplant into slices and put them in the hot oil (eggplant absorbs oil, so add a little more oil than usual). 2. Fry the eggplant until half cooked, then add the onion, garlic and chili into the pan and fry together.

3. Add a little salt (very little), vinegar (according to personal taste), and soy sauce (mainly for the eggplant to change color) and stir-fry again.

4. When the eggplant is cooked, add two spoons of sugar when it is almost ready to be served. Stir-fry twice and serve.
