Regarding the quality of winter melon, except for the young melons picked early, which are required to be fresh and tender, the old winter melons picked late are generally required to be: fully developed, mature, firm and thick in flesh, with small ventricles; the skin should be green with white frost, have a regular shape, be free of spots and external injuries, and not be soft or rotten.
