The crude protein content of black glutinous rice is between 8.8% and 14.15%, with an average of 11.48%, while that of white glutinous rice is only 7.53% to 11.18%, with an average of 9.52%; the lysine content of black glutinous rice is between 0.32% and 1.52%, with an average of 0.41%, while that of white glutinous rice is only 0.28% to 0.37%.

The riboflavin content of black glutinous rice is almost 0.32%; the riboflavin content of black glutinous rice is between 0.12 and 0.31 mg per 100 grams, with an average of 0.19 mg, while that of white glutinous rice is only between 0.08 and 0.15 mg, with an average of 0.1 mg. According to folk eating habits, black glutinous rice is eaten as brown rice, and white glutinous rice is eaten as refined white rice. Therefore, generally speaking, the nutritional value of black glutinous rice is much higher than that of white glutinous rice.
