2. Cooling of bamboo shoots

After the bamboo shoots are cooked, they need to be cooled. The best way is to put the cooked bamboo shoots directly into cold water to cool down. At this time, you must pay attention to protecting the tips of the bamboo shoots, while the spring bamboo shoots need to be pierced through the inner sections with bamboo sticks.

3. Sterilization

When pickling bamboo shoots, sterilization is also an important step. After cooling the bamboo shoots, take them out and put them in a special fungicide. Common fungicides include sodium hypochlorite and bleach solution. The bamboo shoots should be soaked in the fungicide for more than half an hour and taken out after soaking. They must not come into contact with raw water again.

4. Pickling bamboo shoots

Put the sterilized bamboo shoots into a jar, alternating a layer of salt and bamboo shoots back and forth, and finally pour in clean water and pickle them directly. The bamboo shoots should be completely submerged in the salt water. Finally, seal the jar, and after a while the bamboo shoots inside can be pickled.
