Use a knife to scrape off a thin layer of the inner layer on the side where people bite the watermelon flesh, and then cut off the green hard skin on the outside. The middle part is then edible.

2. After the watermelon rind is processed, it can be cut into strips or slices, and then add appropriate amount of light soy sauce, table salt, balsamic vinegar, sesame oil and other seasonings. 1. Watermelon rind herbal tea

Watermelon rind can clear away heat, detoxify and prevent heatstroke. In summer, you can make it into herbal tea and use it when needed. You can prepare 50 grams of watermelon rind, a dozen wolfberries, and an appropriate amount of rock sugar. Wash the prepared wolfberries with clean water, then peel off the outer hard skin of the watermelon rind and cut it into small pieces. Put the cut watermelon rind, wolfberries and rock sugar into the pot, add appropriate amount of clean water, heat to a boil and cook for half an hour. Turn off the heat and cool it down. Put it in the refrigerator for a few hours before taking it out and drinking.

2. Watermelon Rib Pork Rib Soup

Watermelon rind can also be used with spare ribs to make soup. You need to prepare 200 grams of fresh spare ribs, 200 grams of watermelon rind, appropriate amounts of ginger slices, salt and water. Chop the prepared spare ribs into pieces, blanch them in boiling water for two minutes, then put them into the soup pot, add ginger slices, add enough water, heat and boil, and simmer over low heat. At the same time, remove the red part of the watermelon rind and remove the outer green hard skin, cut into larger pieces, and add the watermelon rind pieces to the pot after the spare ribs have been boiled for half an hour. Add salt to taste after another half an hour and serve.
