1. When cooking water chestnuts, you should prepare fresh water chestnuts, and appropriate amounts of salt and vinegar. Before cooking, wash the water chestnuts with clean water, and then soak them in light salt water for half an hour. After soaking, rinse them with clean water to remove the moisture.

2. Put the processed water chestnuts into the pot, add enough water and then put in table salt. Bring to a boil over high heat and cook for 10 to 15 minutes until cooked through.

3. Take the cooked water chestnuts out of the pot and put them in cold water to cool down. When the temperature is suitable, take them out, remove the skin and eat them.

Cooking method 2

1. When cooking water chestnuts, you can prepare 500 grams of water chestnuts, three sections of green onion, three slices of ginger, appropriate amounts of pepper and star anise, and also a little bay leaves and salt.

2. Soak the prepared water chestnuts in clean water for one hour. Use an old toothbrush to clean the mud, sand and dirt on the surface of the water chestnuts, and then rinse it several times with clean water.

3. Cut the scallion into sections, slice the ginger, and put them into the pot together with the washed water chestnuts. Add enough water, and finally add the Sichuan peppercorns, bay leaves or salt. Cover the pot and bring to a boil over high heat.

4. After boiling, turn down the heat and cook on medium heat for about 20 minutes. The water chestnuts in the pot will be cooked. Don't rush to take them out of the pot. Let them soak in the soup for 2 to 3 hours to help the water chestnuts absorb the flavor better.

5. After the water chestnuts are seasoned, take them out of the pot, drain the water, and directly remove the shell to eat. However, you must be careful when eating water chestnuts, as they contain a lot of starch. Do not eat too much at one time, otherwise it will cause abdominal bloating.
