Salted Egg Yolk Tea Tree Mushroom

Accessories: salted egg yolk, eggs. Seasoning: salt, sugar, starch.

Preparation method:

1. Wash the tea tree mushrooms, put them into boiling water, add salt and cook for 3-5 minutes. Take them out and drain the water. Put them into a container, add eggs and stir evenly, then sprinkle with starch and mix well.

2. Put the pan on fire and pour in the oil. When the oil is hot, add the mixed tea tree mushrooms and fry until golden brown. Remove and drain the oil. Leave a little oil in the pan, add salted egg yolks, salt and sugar and stir-fry. Pour the fried tea tree mushrooms and stir-fry evenly before serving. Features: fluffy and tender, salty, fragrant and crispy. First, soak the tea tree mushrooms in warm water for about 30 minutes. Then, wash the tea tree mushrooms (some sand).

3. Dice and put into a clean pot to drain water. 4. Add oil (appropriate amount) and onion, stir-fry until fragrant. Add the dried tea tree mushroom and stir-fry. 5. After frying, add salt, oyster sauce, and soy sauce. Finally, add chopped green onion, and a vegetarian stir-fried tea tree mushroom is ready.

Cured Meat with Agrocybe

Ingredients: A handful of tea tree mushrooms, 1 piece of bacon, 1 green pepper and 1 red pepper, 8 cloves of garlic, 2 tablespoons (30 grams) of hot sauce, 8 dried red peppers, 2 teaspoons (10 ml) of oyster sauce, 1/2 teaspoon (3 grams) of salt, 2 teaspoons (10 grams) of sugar

practice:

1) Soak the tea tree mushrooms in warm water, remove them, clean them, cut off the roots, and filter the soaking water for later use.

2) Pour an appropriate amount of water into the pot, heat it to boiling over high heat, add the tea tree mushrooms and blanch them for 1 minute, then remove and cut into sections. Add the bacon and blanch for 3 minutes until the surface changes color, remove and slice. Remove the stems of the green and red peppers, wash and cut into small pieces. Peel the garlic, wash and crush.

3) Pour oil into a wok, heat over high heat until it is 60% hot, then turn to medium-low heat, add hot sauce and dried red peppers and fry the oil until it turns red. Then add garlic and oyster sauce and stir-fry until fragrant. Add tea tree mushrooms and stir-fry for 2 minutes. Add bacon and filtered tea tree mushroom water to cover the surface of the ingredients. Add salt and sugar, cover and simmer for 5 minutes, then add green and red pepper pieces and continue to stir-fry for 1 minute.
