1. Processing melon peel

1. After eating the watermelon rind, rinse the rind with water, sprinkle some salt on it, rub it with your hands for a while, and then rinse it with water.

2. Use a knife or peeler to peel off the outermost green skin of the melon.

3. Put the green skin pieces into a blender, add some water and beat into a paste.

4. Filter the beaten melon rind paste with clean gauze, squeeze out the juice, use the filtered melon rind juice to knead the dough, and put the filtered residue in the filling.

2. Make the filling

1. Peel off the white flesh of the green outer layer, grate it into thin strips with a grater or chop it with a knife. The white flesh will release a lot of water.

2. Filter the melon shreds with gauze and squeeze out as much water as possible.

3. Beat the eggs and fry them in a pan, then cut them into small pieces with a spatula.

4. Mix the squeezed melon shreds, chopped eggs and green skin residue. Take out another half and add dried shrimps and mix well.

5. Add sesame oil and salt to the filling and mix well. The filling is cooked and you can taste it while mixing.

3. Knead the dough and make dumplings

Ingredients: 500 grams of flour, 260 ml of melon peel juice (or water).

1. Pour 250ml melon rind juice into the flour, stir the flour with chopsticks first, then knead the dough repeatedly with your hands. During the kneading process, decide whether to add the remaining melon rind juice according to the situation. Knead into a smooth dough, put it in a container, cover it with a lid and let it rest for 30 minutes (you can make the filling while the dough is resting).

2. Take out a piece of the kneaded dough, sprinkle some flour on the chopping board, knead the dough on the chopping board for a while, then roll it into long strips and cut into small pieces.

3. Sprinkle a little more flour on the dough and press it into a round cake shape.

4. Roll it into dumpling skin.

5. Wrap the mixed stuffing and make into dumplings.

6. Boil water in a pot. After the water boils, pour a little salt into the pot (note that the water will boil abnormally when the salt is added to the pot).

7. Pour in the wrapped dumplings (do not pour in too much at one time), cook over medium heat, gently push the dumplings with a strainer, and cover the pot.

8. Wait until the water in the pot boils again and the dumplings float up. The delicious and refreshing watermelon rind dumplings are ready.
