[Watermelon rind recipe 1] Cold watermelon rind salad

Material selection:

Watermelon rind, sugar, salt, chicken powder, sesame oil, pepper, chili oil, coriander.

Preparation method:

(1) Cut out the white part of the watermelon rind and cut it into small pieces. Put them in a bowl, sprinkle some salt on them and marinate for ten minutes.

(2) Wash the pickled watermelon rind with cold boiled water and then add the seasoning.

(3) Add appropriate amount of sugar, salt, chicken powder, sesame oil, pepper, chili oil, and chopped coriander, mix well, and add a little aged vinegar if you like.

[Watermelon rind recipe 2] Watermelon rind kimchi

Material selection:

150 grams of jellyfish skin, 300 grams of watermelon rind, 1/2 shredded chili pepper, 1 shredded green onion, 1/2 tablespoon of sesame oil, 1/2 tablespoon of sugar, a little salt, 2 teaspoons of salt.

Preparation method:

(1) Cut the jellyfish skin into strips and then cut it in half. Wash it several times with water, soak it for 2 minutes to remove the saltiness, wash it again with clean water, remove it from the water and drain it for later use.

(2) Wash the watermelon rind, remove the green outer part and the cottony inner part of the white rind, and then cut it into 0.5 cm thick strips. Marinate with 2 teaspoons of salt for 15 minutes. After the rind softens and releases water, squeeze out the water and set aside.

(3) Add all ingredients to seasonings and mix well. Marinate for about 20 minutes and the watermelon rind kimchi is ready to eat.
