How to make papaya coconut milk sago

1. Peel and cut papaya into pieces. Soak tapioca pearls in cold water (it takes two hours to soak. I soaked them the night before).

2. Put the tapioca pearls into the pot and cook until they become transparent. Remove from the pot and rinse with cold water.

3. Pour clean water into the pot and bring it to a boil. Add papaya cubes and cook for two minutes, then add sago and coconut milk. Turn off the heat and serve after the water boils.

The most traditional one is the starch extracted from the pith of the sago palm, which is processed manually. In coastal areas such as Guangdong, it is also called sago rice or sago rice.
