Ingredients: 150g unsalted butter, 100g powdered sugar, 200g low flour, a pinch of salt, 1/2 spoon of egg liquid, 2 spoons of honey oil grapefruit peel

How to make honey grapefruit peel cookies

1. Soften the butter at room temperature, sift the low flour and salt, and beat the eggs for later use.

2. Add powdered sugar to the softened butter and beat with a whisk until it becomes feathery. Pour in the egg liquid and continue beating.

3. Add the candied grapefruit peel and beat with a whisk.

4. Add the sifted low flour and salt, and mix evenly with a spatula.

5. Put the batter into a fresh-keeping bag and refrigerate for about 30 minutes until it hardens.

6. Take out the dough, divide it into two parts, shape it into a rectangle or round shape, wrap it in a plastic wrapper, and put it in the refrigerator for 1-2 hours.

7. Take out the frozen dough after it is completely frozen, cut it into thick slices, and arrange them on a baking tray, leaving enough space between them.

8. Preheat the oven to 180 degrees, middle layer, about 15 minutes

9. Take out the baked cookies and seal them for storage after they have cooled.

Notes on making honey pomelo peel cookies

This is the amount for two baking trays. I didn’t dare eat it right after it was baked in the evening because there were quite a lot of butter and sugar. I ate a piece the next morning. Hmm, it was crispy and slightly bitter with grapefruit peel. It was good. But next time I make it, I will reduce the amount of oil and sugar. It will be a bit sweet.
