How to pickle peppers

1. The materials needed for pickled peppers are 5 pounds of soy sauce, which must be pure, half a pound of salt, appropriate amounts of ginger, garlic, green onion, high-proof liquor, pepper, fennel, a little cooking oil, and 6 pounds of fresh peppers.

2. How to make pickled peppers: 1) Select some intact peppers, pick out the damaged ones, then wash them clean, then drain the water. It usually takes half a day to drain them. You can also put the peppers in the sun to dry them, so that the moisture in the peppers will be easier to dry.

2) Cut the chili peppers into small pieces of 1 cm long. Then boil the soy sauce and let it cool for later use. Heat the oil and put the pepper, fennel, ginger, garlic and other ingredients into the oil pan to stir-fry. Pour out and let it cool for later use.

3) Add an appropriate amount of salt to the soy sauce, then put in the chili peppers, add an appropriate amount of white wine, mix well, cover it with a lid, and leave it for a few days. This jar of delicious chili pickles is ready.
