When pickling chives, you can prepare 500 grams of chives, 150 grams of salt, 10 grams of ginger and 5 grams of alkaline noodles. If the amount of pickling is large, the seasoning can be increased according to this ratio.

How to pickle chives

1. Wash the purchased chives with clean water, then soak them in cold water for four to five hours. Take them out after soaking and drain the water.

2. Chop the washed chives into small pieces, try to chop them as finely as possible. Wash the ginger, then make it into minced ginger and chop it together with the chives.

3. Put the chopped chives and ginger in a bowl, add salt and alkaline noodles and stir. Cover and seal after mixing. Stir twice a day. You can take it out and eat it after a week. Remember not to bring in raw water when taking it out. Store it in the refrigerator and it can be kept for a whole winter without deterioration.
