How to make spicy chicken

First, wash the chicken and cut it into small pieces and put them in a bowl (if it is too big, it will not taste good). Add three spoons of starch water, one spoon of cooking wine, half a spoon of salt and a few slices of ginger, stir well and let it sit for 15 minutes.

Squeeze out as much water as possible. Heat the oil until it smokes and then put the chicken in to fry until cooked. Add a spoonful of sugar halfway through. It will take about a minute before you take it out.

Use the oil in the pan to fry the whole dried chili pepper, diced red pepper, diced garlic, and sliced ​​ginger. (It doesn't matter if you have more of these ingredients)

When you start to sneeze and the pan is smoking, put the chicken in. Add the peppercorns at the same time. Stir-fry for another minute, add salt and chicken stock (the amount depends on your taste), and add some light soy sauce.

1. When frying dried chilies and Sichuan peppercorns, use low heat and fry until fragrant.

2. Add a proper amount of fresh soup to soften the fried chicken but not to leave too much water.

3. Choose pheasant as the chicken. The chicken must be tender so it can be fried quickly. Old chicken needs to be pressed in a pressure cooker before being fried. You can add some red dried chilies for color before serving.

1. When eating peanuts, it is best not to exceed 100 grams per day.
