How to cook roasted eggplant?

A small green pepper Starch

Oil Pixian Douban

1 tablespoon tomato sauce and oyster sauce

Add 1 tablespoon of Lee Kum Kee Steamed Fish Soy Sauce

A spoonful of sugar and a handful of chopped green onion and garlic

Three dried chilies

How to cook roasted eggplant

1. Cut the eggplant into eight strips vertically, and then cut the eight strips into dices

2. Microwave the eggplant cubes on high heat for four minutes (this step is a good way to save fuel, fire and energy)

3. Roll the eggplant pieces evenly in dry starch, not too much, and pat them to make sure there is no excess starch on them.

4. Heat the oil over high heat, remember high heat!!! Then add the eggplant cubes. (If there is not enough oil, fry them in batches) Fry until cooked, remove from the pan and place kitchen paper on the plate to absorb the oil.

5. Prepare a bowl of sauce: 2 tablespoons of Pixian Douban, 1 tablespoon of tomato sauce, 1 tablespoon of oyster sauce, 1 tablespoon of Jiawei Jixian, 1 tablespoon of Lee Kum Kee steamed fish soy sauce, 1 tablespoon of sugar. Mix well.

6. Heat a little oil in another clean pan, add chopped onion and garlic, stir-fry until fragrant, add the sauce from the previous step, stir-fry evenly, add tomatoes and green pepper cubes, stir-fry for 1 minute until cooked.

7. Pour the fried eggplant cubes in, coat them evenly with the sauce, and serve.

Tips

Microwave the eggplant cubes first. This is a good way to save fuel, fire and energy. The same can be applied to potatoes, pumpkins, etc. before frying.

The third step is to put the eggplant pieces into the pan with hot oil over high heat, which can quickly harden the surface of the eggplant pieces and prevent the oil from seeping in, thus saving oil.
