How to make fried cowpea with meat

1. Wash the cowpeas, cut them into 3cm long pieces, blanch them in hot water to remove the beany smell, remove them and put them in cold water to cool, remove them and drain the water for later use.

2. Slice the tenderloin, pour a small amount of soy sauce (light soy sauce) and half an egg white, add a small amount of starch, mix well, season, and set aside

Tips

After the tenderloin is mixed with starch, egg white and light soy sauce and seasoned, it will be smoother and more tender and taste better when fried.

If you like chicken powder or MSG, you can add it. I don’t like it, so I don’t add it. It’s just my personal preference.

Sichuan pepper powder can be replaced with Sichuan peppercorns, and the taste will not change much.
