1. Causes of green bean poisoning

First of all, we need to know that among the ingredients of green beans, there is a substance called saponin that strongly irritates the gastrointestinal tract. This substance is an alkaloid that can easily cause local congestion, swelling and hemorrhagic inflammation of the gastrointestinal tract. Not only that, saponin can also destroy erythrocytes and cause hemolytic symptoms. However, since saponin is mainly found on the epidermis of green beans , its toxicity can be destroyed by heating it to above 100°C during cooking . But in daily life, for various reasons, the cooking temperature of green beans often cannot reach 100°C, which can easily lead to poisoning incidents.

2. Symptoms of green bean poisoning

The onset of poisoning from green beans is not consistent, ranging from a few minutes to several hours, depending on the patient's physical condition and environment. Most poisoning symptoms are mainly gastroenteritis , such as nausea, vomiting, abdominal pain, diarrhea, etc. Most poisoned people vomit several times, and some may vomit more than 10 times. They also feel numbness in the limbs , burning in the stomach, palpitations and shortness of breath. In addition , different patients may also have neurological symptoms such as dizziness, headache, chest tightness, cold sweats and chills.
