Steps to cook rotten cowpea

Today I will tell you how to make rotten cowpea. This dish looks complicated, but it is very simple to make:

Rotten meat cowpea tools/materials

Minced pork, pickled cowpea, fresh cowpea, crispy peanuts, dried chili peppers, and salt (I prefer less salty food, so I didn’t use salt).

Steps/Methods of cooking rotten cowpea

Dice the cowpea, peel the crispy peanuts and crush them into coarse grains, and cut the dried chilies into sections.

Put the two kinds of cowpeas in a bowl, mix well and marinate for more than half an hour to remove the raw taste of fresh cowpeas. After marinating, squeeze out the juice.

Put oil in a pan and heat it until warm. Add the chopped meat and stir-fry until cooked. Remove the meat and leave the oil (people who like salty food can add salt in moderation).

When the oil in the pot rises to 60% hot, add the dried chili segments and stir-fry until fragrant, then add the chopped cowpeas and stir-fry until the fresh cowpeas are cooked.

Add minced meat and stir-fry for about one minute.

Add chopped peanuts before serving.

After stir-frying evenly, remove from the pan and serve.

3. The ratio of soaked cowpea to minced meat is about 1:2;

4. The minced meat should preferably have a little fat, but all-lean meat is also OK;

5. The minced meat particles can be larger than those of ordinary dumplings and wontons, so that the taste will be better;

6. The chopped green onions at the end can be omitted, depending on personal taste. You can also add mashed garlic and peppercorns to stir-fry when the oil is heated to increase the aroma.
