200g cowpea

Fish-flavored cowpea seasoning:

10g pickled pepper, 5g ginger, 5g green onion, 5g garlic, 3g salt, 5g sugar, 5g vinegar, 2g MSG, 5g soy sauce, 30g chili oil, 5g sesame oil, as appropriate

How to cook fish-flavored cowpea:

1. Remove the seeds and stems of the pickled peppers and chop them into fine pieces;

2. Peel the ginger and cut into small pieces;

3. Peel and chop garlic into small pieces;

4. Wash the green onions and cut them into chopped green onions;

5. Put salt, sugar, MSG, soy sauce and vinegar in a bowl and mix well. Add pickled chili powder, ginger and garlic powder, chopped green onion, chili oil and sesame oil and mix well to make the fish flavor sauce for cold dishes.

6. Wash and straighten the tender cowpeas, cut off the two ends, cut into 5 cm long sections, and blanch them in boiling water. When they are cooked, remove them, add sesame oil, mix well, and spread them out to cool;

7. Place the blanched cowpeas neatly on a plate and drizzle the prepared sauce on top when serving.

Seasoning: 3g MSG, 25g chili oil, 2g sugar, 3g sesame oil, 2g Sichuan peppercorns, 14g shacha sauce, as appropriate

How to make spicy and sour cowpea:

1. Soak the cowpeas in salt water, take them out and place them on a chopping board. Cut them into 4 cm long segments with a knife and place them on a round plate to form a steamed bun shape.

2. Add MSG, red oil, sugar, sesame oil, pepper oil and shacha sauce into a bowl to make a sauce. Pour it on the peas in the plate and mix well.
