How to make cowpea dumpling filling

The dumpling skin is thin, the filling is tender, and the taste is delicious. There are generally two ways to make dumplings: pinching with hands and squeezing with hands. When I first learned how to make dumplings, I always pinched them because it was easier to wrap them. If you squeeze them, it is easy to not press them tightly, and the filling is easy to leak when cooking, especially meat fillings, which are usually soft, so it is difficult to wrap. If they are too hard, they will not be fragrant.

How to make cowpea dumplings:

1. Clean the cowpeas, blanch them in boiling water until they change color, remove them and immediately rinse them in cold water to keep them green, drain the water slightly and then chop them.

2. Add onion, ginger, cooking wine, sesame oil, oyster sauce, salt, soy sauce, and dumpling filling seasoning to the meat filling and mix well until it is firm.

3. Mix the cowpea and the beaten meat together and mix well.

4. Add water to flour and knead into a dough of moderate hardness and let it rest for 20 minutes. Knead the rested dough into strips and cut into small pieces. Take a small piece and roll it into a skin that is thick in the middle and thin on the edges.

5. Put the cowpea filling in the middle of the dumpling skin and wrap it into dumplings. Add water to a pot and bring to a boil. Add dumplings. When they float, add water twice and remove from the pot.
