Introduction to Stir-fried Cowpea

Cowpeas provide high-quality protein that is easy to digest and absorb, an appropriate amount of carbohydrates, and a variety of vitamins and trace elements, which can supplement the body's signature nutrients. The vitamin B1 contained in cowpeas can maintain the normal secretion of digestive glands and gastrointestinal motility, inhibit the activity of cholinesterase, help digestion, and increase appetite. The vitamin C contained in cowpeas can promote the synthesis of antibodies and enhance the body's antiviral effect. The phospholipids in cowpeas promote insulin secretion and participate in sugar metabolism, making them an ideal food for diabetics. Steps/Methods for Stir-fried Cowpea

Wash and cut cowpea into inch pieces

Put water in the pot, add salt and a small amount of oil after the water boils, add the cowpeas and blanch for 1 minute

Minced garlic

Put the blanched cowpeas into cold water immediately.

Sprinkle minced garlic on the cowpeas

Add vinegar, salt, chicken essence, and June fresh soy sauce

Heat oil in a pan and fry the peppercorns until fragrant

Pour the fried pepper oil on the cowpea while it is still hot and stir well.

Precautions

In order to keep the cowpeas crisp, put them in cold water directly after blanching.
