Green pepper and cowpea minced recipe tutorial

Ingredients: 100g cowpea, 25g green pepper, 15g garlic seeds

Ingredients: 3g oil, some salt, some soy sauce

Soak the cowpeas in water for 20-30 minutes, changing the water 1-2 times in the middle to remove pesticide residues.

Cut the green pepper into strips and then into small dices

Wash the cowpeas and cut them into 2-3 cm long segments. The picture shows the chopped green peppers and cowpea segments

Chopped garlic seeds

Heat oil in a pan until slightly hot

Pour in garlic seeds and cowpea segments, stir-fry for about half a minute, and the cowpea segments will turn green.

Add salt and mix well

Add the diced pepper and stir fry for half a minute

Finally pour in soy sauce and mix well

Precautions

Cowpeas are prone to insects during their growth period, and a large amount of pesticides are sprayed during planting. They must be soaked in water before processing, and rice washing water is even better;

Cowpeas should not be overcooked, otherwise nutrients will be lost, the color will turn yellow, and the taste will be soft and mushy;

You can choose non-spicy round peppers or spicy long green peppers. However, for student nutrition meals, it is better to choose non-spicy or slightly spicy ones.
