Loofah Ingredients 1:

Every 100 grams of loofah contains 92.9 grams of water, 1.4-1.5 grams of protein, 0.1 grams of fat, 4.3-4.5 grams of carbohydrates, 25 kcal of calories, 0.3-0.5 grams of crude fiber, 0.5 grams of ash, 18-28 mg of calcium, 39-45 mg of phosphorus, 0.8 mg of iron, 0.32 mg of carotene, 0.04 mg of thiamine, 0.03-0.06 mg of riboflavin, 0.3-0.5 mg of niacin, 0.04 mg of vitamin B1, 0.06 mg of vitamin B2, and 5-8 mg of ascorbic acid. In addition, it also contains saponins, loofah bitterness, a lot of mucus, citrulline, etc. The loofah is tender, refreshing and can be fried or made into soup, and is suitable for both meat and vegetables. It can be cut into dice and stir-fried, or stir-fried with meat slices, tripe, ham, dried shrimps, etc., or cooked into soup with oil gluten, eggs, edamame, etc. Because loofah dishes have a special fragrance, eating them in summer and autumn has the effect of dispelling heat and clearing the heart.

The leaves of loofah contain oleanolic acid-3-glucoside, oleanolic acid-28-glucoside, oleanolic acid-3-glucoside-28-diglucoside and cucurbitacin B. The flowers contain glutamine, aspartic acid, arginine, asparagine, lysine and alanine. The fruit contains saponin, luffein, a large amount of mucus and trace amounts of citrulline and cucurbitacin B. The loofah contains xylan, mannan, galactan, etc. The loofah juice contains saponin, mucus, xylan, lipids, protein, vitamins C and B. The seedlings contain cucurbitacin. The seeds contain 23.5-38.9% fatty oil, mainly glycerides of linoleic acid, palmitic acid, stearic acid, oleic acid, etc., as well as 0.47% phospholipids, sgualene, α-spinasterol, etc. It also contains saponins (the glycogen is oleanolic acid and linalool, and the sugars are glucose, arabinose, xylose and rhamnose) and cucurbitacin B. The seeds contain the following amino acids: lysine, histidine, threonine, phenylalanine, tyrosine, tadine, methionine, cystine, leucine, isoleucine, tryptophan, serine, glycine, arginine, glutamic acid, aspartic acid, alanine, proline, and gamma-aminobutyric acid.
