Fish-flavored eggplant stew ingredients and steps

We have all eaten fish-flavored eggplant, but have you ever tried fish-flavored eggplant stew? I like it very much, so I will share my little recipe with you:

Ingredients for Eggplant Casserole

600g eggplant 50g minced meat

3 red pickled peppers 1 tablespoon Pixian bean paste

10ml soy sauce 3g aged vinegar

10g sugar, half bowl of water

Water starch onion

A pinch of minced ginger and garlic

Appropriate amount of cooking oil

How to cook eggplant stew

1. Wash the eggplant and cut it into long strips (cut one eggplant into three sections, and then cut each section into four pieces along the length), chop the pickled pepper and bean paste into small pieces

2. Put cooking oil in a frying pan or wok and heat it up. Put the eggplant strips in and fry over medium-low heat until soft and browned.

3. Use the same pot again, add some vegetable oil and fry the minced meat until it changes color.

4. Add pickled pepper and bean paste to make red oil, add chopped green onion and ginger to fry until fragrant, then add the fried eggplant

5. Pour in the soy sauce, vinegar and sugar and stir well

6. Pour half a bowl of water, bring to a boil, cover with lid and simmer for 3 minutes

7. Add minced garlic and stir-fry until fragrant, then pour in water starch and stir-fry until the soup is thick (leave more soup, it is delicious for bibimbap)

8. Heat up a casserole or small clay pot, pour in the fried fish-flavored eggplant strips, sprinkle with a little green onion for garnish, cover with a lid, and serve (if it’s too much trouble, you can put the fish-flavored eggplant strips directly on a plate, but if you’re not eating right away, putting it in a casserole with a lid can keep it warm.

Tips

1. Choose tender eggplants

2. Both soy sauce and bean paste are salty, so don't add salt. The amount of bean paste can be added according to your taste.

3. Both red pickled pepper and bean paste are spicy, if you can't eat spicy food, you can reduce the amount

4. Because it is not fried, you need to add more oil when frying the eggplant and minced meat. The eggplant will not taste good if there is too little oil.
