Cowpea pie is very delicious. I often bring it to the company to eat. My colleagues say it is very delicious. Today I will tell you how to make it:

Cowpea pie ingredients

400g pork belly

300g cowpea

50g bean paste

40ml cooking wine

Sesame oil 20ml

20g ginger

Cowpea pie making steps

1. Add cold water to the flour and stir with chopsticks until it becomes cotton-like.

2. Knead into a smooth dough and let it rise for 20 minutes.

3. Prepare pork belly, cowpea and ginger.

4. Peel and dice the pork belly and place in a large bowl.

5. Add two spoons of bean paste, four spoons of cooking wine and one spoon of sesame oil to the diced pork belly.

6. Add the chopped ginger. Stir well and set aside.

7. Boil water in a pot. After the water boils, put in the cowpeas, cover with a lid and steam for 2-3 minutes.

8. Dice the steamed cowpea and mix it with the meat.

9. After the dough is divided into small pieces, take a small piece and roll it into a round shape. It will become a large dumpling wrapper.

10. Place the prepared meat filling halfway up the dumpling skin.

11. Fold the dumpling wrapper in half and press out patterns with a fork.

12. Add a little oil to the pan and fry both sides until golden brown.

A little chatter:

1. Soybean paste can be replaced with sweet bean paste, which will have a different flavor. Since my family doesn't like sweet food, we used bean paste.

2. The steaming time of cowpeas should not be too long, otherwise they will be too soft. 2-3 minutes can make the cowpeas 80% cooked. Later, by frying, they will definitely be cooked and well preserved.

3. Turn the pies over frequently when frying so that the filling is cooked more thoroughly.

4. There is no need to add salt to the filling because the bean paste already has enough salt.
