Ingredients and methods of stir-fried pork with eggplant

Ingredients for Fried Pork and Eggplant:

150g lean pork, 2 eggplants (about 300g), 50g green pepper, 10g shredded ginger, 20g minced garlic, 50g oil, 1 teaspoon (5ml) cooking wine, 15g water starch (starch mixed with appropriate amount of water), appropriate amount of salt, 5g soy sauce, half teaspoon (about 2g) of sugar, a small amount of chicken powder

How to cook fried pork with eggplant:

1. Cut the lean pork into strips about 7 cm long and 0.3 cm thick, put them into a bowl, add half a teaspoon (3 grams) of salt and 15 grams of water starch (starch mixed with an appropriate amount of water), stir well in a clockwise direction with chopsticks, let it sit for a few minutes, then add 1 tablespoon (15 ml) of water, stir well in a clockwise direction with chopsticks, let the meat fully absorb the water, and marinate for 15 minutes. Wash the eggplant, remove the stems, and cut into thin strips; remove the seeds and tendons of the green pepper and cut into thin strips for later use;

3. Put the eggplant shreds in the pan without adding any oil. Stir-fry until soft (you can also put the eggplant shreds in the microwave on high heat for a few minutes). Remove from the pan and set aside. This is to soften the eggplant without absorbing the oil.

4. Wash the wok, heat it on high heat, add oil, put in the marinated shredded pork, stir-fry, add cooking wine, soy sauce, shredded ginger and minced garlic and stir well;

5. Add green pepper shreds and stir well;

6. Add eggplant shreds and stir-fry evenly, then season with salt, chicken essence and sugar.
