How to cook eggplant at home

Eggplant can be said to be a very authentic home-cooked dish, so today I will introduce to you several common home-cooked eggplant dishes:

1. Fried eggplant with tomatoes

Peel and dice the tomatoes, peel and dice the eggplants, put oil in the pan and fry the eggplants until they are shiny and cooked through, then add the chopped green onions and tomatoes, fry for a few times, add salt, white vinegar, white sugar, five-spice powder, and cook until the tomatoes are rotten. Eggplants and tomatoes are relatives in plants, and they can increase our appetite when used together.

2. Steamed Eggplant

Steam the eggplant until it is soft, but not too soft. I haven't calculated how many minutes it takes. Some people like it soft, while others like it with a slightly hard core. It depends on personal preference. However, if it is too soft and releases too much water, it will not look good. So when steaming it, do not put it on a plate, but place it directly on the steaming rack so that the water will flow down.

Make a sauce with chopped onion, ginger, garlic, chili oil, sesame oil, salt, soy sauce, vinegar and sugar, and eat it with dip.

3. Three Fresh Vegetables

1. Peel the potatoes, cut into thick strips and soak in salt water. Cut the eggplant into strips and cut the garlic into sections and put them into the water. Prepare a bowl of sauce: dark soy sauce, salt, soy sauce chicken sauce, vinegar, water and starch.

2. After the pan is hot, add a little oil and fry the potato strips until they are almost cooked;

3. Add oil to the wok again, add minced garlic and stir-fry until fragrant, then add eggplant strips and stir-fry (for health reasons, you don’t want eggplant to absorb too much oil, so you need to add a little broth, if there is no broth, just add water)

4. When the eggplant is 80% cooked, add the garlic sprouts and potato strips and stir-fry together. Pour in the sauce and stir-fry until the sauce is dry.

4. Stir-fried eggplant with hot peppers

Cut the chili pepper and eggplant into shreds, then add oil and stir-fry the eggplant. When the eggplant is soft, add the onion, ginger, garlic, chili pepper, cooking wine, a little soy sauce, sugar, salt and pepper, and stir-fry for a few times.

Eggplant tastes better when it is oily. If you don't want to eat something so greasy, then you can prepare a flat non-stick pan and put a little oil in it. The eggplant will absorb all the oil when you first fry it, but don't worry, the eggplant will spit out the oil after it becomes soft after frying for a while. But having said that, it still smells better when it is oily.
