As for tomatoes, just pick larger and redder ones.

As for the quantity, you need to consider how many people you plan to cook for. If it is for 2 to 3 people, 3 pounds of ribs and 1 pound of tomatoes will be enough.

The ingredients of this soup are not complicated. Basically, you have ready-made ingredients at home. Even if you don’t, you can also buy them at the vegetable market (farmer’s market) when you go to buy ribs and tomatoes: Sichuan peppercorns (granular), green onions, ginger, and pepper powder.

Chop the green onions into chopped green onions, wash the ginger and cut it into small pieces the size of your thumb.

Generally speaking, when you buy spareribs at the market, you can tell the butcher and he will help you cut the spareribs into small pieces, about 2 inches long. After cutting, wash them several times with cold water, rinse them clean, then boil water in an iron pot, wait for the water to boil, and put the spareribs in the pot. Now that the preparations are done, you can start making the soup.

1. Spare ribs

Add water to the stew pot. You can add more water at the beginning, about three-quarters of the pot. Put in peppercorns, ginger and pork ribs, light the fire. You can use high heat at the beginning. This time is not too long, so don't leave. It will take about 10 minutes. After it boils, use medium heat, then put two chopsticks on the stew pot, and then cover the lid of the stew pot. Only then can you leave.

During the stewing process of the ribs, you should check them repeatedly to see if there are any blood bubble residues on the ribs, whether water needs to be added, and whether the heat needs to be adjusted.

2. Tomatoes

Put the ribs into the pot and stew them for about 60 to 70 minutes. Remember to check how the ribs are cooked. Pick up a piece and taste it. If the meat is chewy, it is about 70% cooked. Now you can prepare to add tomatoes.

First heat the iron pan and add salad oil. When the oil is hot, pour the tomatoes into the iron pan and fry them. Then put the fried tomatoes into the stew pot.

3. Seasoning

After the stew pot is boiled again, you can add a tablespoon of salad oil. Do not add salt and MSG to the soup. After the soup has been stewed for about 15 minutes, smell the soup to see if it is fragrant, the flavor has come out, and the ribs are cooked. If you feel satisfied, add pepper powder, stir evenly with a spoon, and prepare to serve.

4. Remove from heat
