Spicy five-spice broad beans

Today I’m going to show you how to make spicy spiced broad beans. It’s very simple and can be done in just a few minutes.

Spiced broad beans ingredients

300 grams of fresh broad beans, 10 grams of chili powder, 10 dried peppercorns, 10 grams of pepper powder, 5 grams of salt, and 3 grams of sugar.

Spiced broad beans method:

1. Add a little oil to the pan and heat it to 30% hot, add the peppercorns and fry them slowly over low heat until fragrant, then remove them. Heat the pan over high heat until it is 60% hot, add the broad beans and stir-fry evenly;

2. Add salt and sugar to the broad beans, mix well, pour in about 200ml of water, cover and simmer over medium heat for 5 minutes until the broad bean shells crack;

3. After the broad beans open, dry the remaining soup over high heat, then add chili powder and Sichuan pepper powder and mix well.

4. Fresh broad beans are usually sold in shells, not the white shells, but the pods. I was very happy to see broad beans for sale in several large supermarkets in Beijing. They were already peeled off the pods, and the price was a little more expensive but acceptable. Another way to sell them is to peel off the white shells and leave only the green beans. In fact, if the broad beans are fresh enough, you can eat them with the shells.

5. Fresh broad beans are sweet and have a fresh fragrance. There is a famous dish in Yunnan called frog hugging jade pillar, which is actually fried with broad bean kernels and garlic sprouts. It is very vivid.

Notes on Spiced Broad Beans:

It doesn't matter if you buy not-so-fresh broad beans. They are spicy and go well with rice. The red color looks good. However, no matter how you cook them, the broad bean shell will be harder, so you need to add water and simmer until it opens. You also need to add salt early, otherwise it will be difficult to taste.
