How to cook white lentils with Beijing sauce:

1-4. First put the lentils into the pot and dry-fry them over low heat. After the moisture in the beans is dried up, add a little oil and continue to stir-fry. Stir-fry the lentils until they are 80% cooked and set aside.

5-9. Put a little oil in the pan and add the pork belly slices and stir-fry. After the meat slices are fried and the oil is released, add the chopped green onion and ginger to sauté fragrant. Then add Shaoxing wine and soy sauce and stir well. Finally, add yellow paste and stir-fry over low heat.

10-12. Stir-fry the yellow bean paste and meat slices until fragrant, then pour in appropriate amount of water and bring to a boil. Then add the stir-fried beans and stir well.

13-16. After stir-frying evenly, cover the pot and simmer for 10 minutes. When the lentils are soft, sprinkle in a little sugar and MSG to enhance the flavor.

17-18. Finally, use high heat to reduce the soup. After the soup is reduced, you can remove from the pot and place on a plate.

1. When stir-frying white lentils, do not add oil to the pan first. Use a dry pan to stir-fry continuously over low heat. After the water vapor is gone, add a little oil. This saves oil than deep-frying, and it is not easy to explode due to the reduction of water during frying.

2. If you stir-fry with sauce, you don't need to add salt. If you like to eat garlic, you can also add an appropriate amount of minced garlic when the lentils are out of the pot, which tastes good and can prevent gastrointestinal diseases in summer.
