Dry Pot Tea Tree Mushroom

Ingredients: Fresh tea tree mushroom , pork belly , dried chili pepper , Sichuan peppercorns , onion, ginger

1. Soak fresh tea tree mushrooms in light salt water for 10 minutes, then rinse with clean water, drain and cut into 6cm long segments. Cut green onions, ginger and garlic into thin slices for later use.

2. Cut the pork belly into 4cm long and 3mm thick slices. Chop the Pixian bean paste into small pieces. Break the dried chili peppers into two halves, and don’t throw away the chili seeds.

3. Pour clean water into the pot and heat it over high heat. After the water boils, add the tea tree mushrooms. When the water boils again, remove the tea tree mushrooms and drain.

4. Pour oil into the pot, heat on low heat, add chopped Pixian bean paste, stir-fry until fragrant, then turn to medium heat, add pork belly slices, onion, ginger and garlic slices, stir-fry until the meat turns white, then add dried chili, Sichuan peppercorns, and tea tree mushrooms in turn, continue to stir-fry for 5 minutes, add salt, soy sauce, and sugar, stir-fry evenly, finally drizzle in water starch and pour in sesame oil.

Tips:

Fresh tea tree mushrooms do not have too much fine sand at the roots, so they are easier to clean than dry tea tree mushrooms and also save the time of soaking. However, when cleaning, it is still best to soak them in light salt water for 10 minutes.

Tea Tree Mushroom and Duck Soup

Main ingredients: 20g of Agrocybe agrocybe, 10g of dried mushrooms, 1 old duck, 2 pieces of spring bamboo shoots, 20g of ham Seasoning: 2 teaspoons of refined salt, 1 teaspoon of MSG, appropriate amount of chopped green onion

1) Soak the Agrocybe and button mushrooms in warm water, remove and clean them, filter the soaking water and set aside.

2) Peel off the outer hard shell of the spring bamboo shoots, cut off the old roots, loosen them with the back of a knife, and then cut into sections.

3) Remove the head, tail, claws and internal organs of the old duck, then clean and chop into large pieces. Pour clean water into a pot, bring to a boil over high heat, add the duck pieces and cook for 5 minutes. Remove from the water after the surface changes color. Wash and cut the green onions into sections. Wash and crush the ginger with a knife.

4) Pour the soaked and filtered mushroom water into the casserole, add enough water again, bring to a boil over high heat, add duck pieces, ham slices, scallion segments, ginger pieces, tea tree mushrooms and mushrooms, cover with a lid and simmer on low heat for 3 hours.

5) After 3 hours, add the bamboo shoots and continue to simmer for 20 minutes. Add a little salt to taste before serving.

Tea tree mushroom is rich in nutrition, with a protein content of up to 19.55%. There are 18 kinds of amino acids in the protein, of which methionine has the highest content of 2.49%, followed by glutamic acid, aspartic acid, isoleucine, glycine and alanine. The total amino acid content is 16.86%. It contains all the 8 essential amino acids for the human body, and is rich in B vitamins and mineral elements such as potassium, sodium, calcium, magnesium, iron and zinc.
