Corn flour glutinous rice flour

Two spoons of dried shrimp

1. Mix the dried shrimp, eggs and chopped chives together. Dried shrimp has salt, so you don’t need to add salt. Just add some chicken essence to season.

2. Add corn flour and glutinous rice flour in a ratio of 6:1, that is, 6 spoons of corn flour and 1 spoon of glutinous rice flour. If there is no glutinous rice flour, you can replace it with starch or flour. Glutinous rice flour has a high viscosity and will increase the softness of the pancake. This is also the trick to rolling it up.

3. Mix all ingredients evenly to make batter

4. Put a little oil in the pan, heat it up, scoop a spoonful of batter into the pan with a frying spoon, it is best to use a flat pan, so that the pancake can be thin and even, turn it over and fry the other side, and fry it over medium heat.

5. After baking, you can roll it up and cut it into sections, which is more convenient to eat

Tips

The effect will be better if you choose finer cornmeal. You will not feel the roughness of corn at all and it tastes very good.

1. Mix cornmeal and white flour in a 1:1 ratio with water to make a batter

2. Brush a thin layer of oil in the pan, heat the pan, put in the batter, turn the pan, add sugar and stir evenly. You can add a little baking powder to increase the softness and spread it evenly. If you don't have it, you can also leave it out.

3. Fry one side, turn it over, and fry both sides until cooked.

1. Corn contains a large amount of lecithin, linoleic acid, cereal alcohol, vitamin E, cellulose, etc. It has many health benefits such as lowering blood pressure, lowering blood lipids, preventing colon cancer, beautifying the skin, and delaying aging.

2. If you make pure corn tortillas, the taste will still be a little worse, so add white flour to neutralize it, and it will be softer and more delicious.
