Today I have nothing to do, so I will tell you the detailed process of making corn juice: ProcessMaterial selection--→Remove husk and whisker--→Wash--→Inactivate enzyme--→Cool--→Scrape and take grains--→Pulp--→Filter--→Corn juice--→Mix and blend--→Homogenize--→Filter--→Fill--→Can--→Sterilize--→Cool--→Finished product Operation points1. Raw material selection: Choose fresh corn that is tender, plump, golden in color, free of pests and diseases, and free of rot. 2. Raw material pretreatment: peel off the corn husks and silks, and wash with clean water. 3. Inactivate enzymes: Boil the corn cobs in boiling water for 5 minutes to destroy the oxidase, which helps stabilize the color and improve the texture and flavor. 4. Scrape and take out particles: Use an automatic scraper to scrape the particles. 5. Pulping and filtering: Add appropriate amount of water to the weighed corn kernels, pulp with a pulper, separate the liquid with a centrifuge, remove the residue, and then filter with 120 mesh gauze. Pour the clarified juice into a tank for later use. 6. Ingredients: The formula is (%): corn juice 80, white sugar 10, citric acid 0.2, honey 1.2, carboxymethyl cellulose 0.01, sucrose ester 0.09, gelatin 0.08, agar 0.24, water 8.18. First, mix the sugar, carboxymethyl cellulose, and sucrose. Ester, gelatin and agar are hot-melted and filtered. After cooling, they are added into the mixing tank together with other ingredients and stirred evenly. 7. Mixing and homogenization: Add the prepared and mixed ingredients into a high-pressure homogenizer and homogenize them to make the texture uniform and tender, and avoid stratification and precipitation. 8. Canning and sterilization: Pour the homogenized juice into clean and sterilized glass bottles and seal them. Then, use high temperature instant sterilization at a temperature of 121°C for 30 seconds. 9. Cooling and packaging: The sterilized beverage is cooled in sections to below 40°C, stored in a 37°C insulation warehouse for one week, the product is inspected, and then packaged for sale. |
