Storage and nutritional content of wild rice stem

Wild rice is a very good vegetable with a good taste. Many people like to eat it, but we must understand its nutritional value.

Wild Rice

It is one of the specialty vegetables in my country. In ancient times, it was called Diaohu, Gu, Feng, Gupu, Gugua, Gusun or Shuigua. The history of wild rice in my country is at least more than 3,000 years. "Zhou Li. Tianguan. Shanfu" records: "All the gifts for the king are six grains (Xu, Shu, Ji, Liang, Mai, and Gu)". At that time, Gu had small yellow flowers, and the seeds after the flowers fell were black. The fruit was long and pointed at both ends. After peeling the shell, it was edible and called Gumi. Later, people found that some plants could not bloom and bear fruit, but the stems at the base swelled to form a fat, white and tender fleshy stem, so they picked it and cooked it, which is today's wild rice. Lüshi Chunqiu says: "The most beautiful vegetable is the ruler of Yuelu." Li Shizhen's Compendium of Materia Medica also says: "In the south of the Yangtze River, wild rice is called jiao because its roots are intertwined." Because of its appearance, wild rice is also nicknamed "beauty legs."

Wild rice is distributed in all parts of China south of the Yangtze River Basin, and is also cultivated sporadically in North China. Wild rice in the south of the Yangtze River has long been famous, and is as famous as wild rice and sea bass, and is known as the "three famous dishes" in the south of the Yangtze River. Zhang Zhihe of the Tang Dynasty wrote in "Fisherman's Song Fu": "The owner of the crab house in Songjiang is happy, and we also eat wild rice and pure soup. Maple leaves fall, reed flowers dry, and I stay drunk in the fishing village without feeling the cold."
